Prawn Pate (Chinese Recipe)

Ingredients

(6 servings)

1 lb Prawns, shelled and deveined
3 tb Butter
3 tb Cream cheese
1 tb Sour cream
2 Drops of tabasco
1/2 ts Nutmeg
1 Crushed clove of garlic
1 tb Lemon juice
1 ds Of salt and pepper

Instructions

Mince prawns and beat together with all other ingredients until smooth. Garnish with a whole prawn. Serve with hot toast triangles.

Ayam Masak Merah (Malaysian Recipe)

Ingredients
1 kg chicken, chopped into bite-sized pieces
2 onions, quartered
3 potatoes, cut into wedges
2 tomatoes, quartered
1 small can tomato paste
150ml water
4cm piece cinnamon stick
4 cloves
1 star anise
3–4 tbsp oil

Ground spices (A):
10 shallots
4 cloves garlic
12 red chillies, seeded
3cm ginger
2 tbsp coriander powder
1 tsp cumin powder

Seasoning (B):
1 tsp salt or to taste
1 tbsp sugar or to taste

Method
Heat oil until hot, sauté ground spices (A) until fragrant. Add in cinnamon stick, cloves and star anise. Fry for 1–2 minutes.

Add onions, tomato paste and potatoes. Stir-fry well. Mix in water and tomatoes. Cook until mixture starts to boil. Reduce heat and simmer until chicken is tender and gravy turns thick.

Add seasoning to taste and serve this mildly spiced curry dish with bread slices or with plain rice.

Alu Baigan (Indian Recipe)

Rich in iron, Eggplant (Baigan) is a very healthy vegetable and is helpful in enriching the Hemoglobin of the body. It also helps in neutralizing the effect of excessive starch found in potatoes.

Ingredients

2 cups cut potatoes pieces , (about 3 medium potatoes)
6 cups cut eggplant pieces (1 large eggplant)
2 onions chopped
1 large tomato, chopped
1-inch piece ginger chopped
1 tsp. cumin
½ tsp. turmeric
½ tsp. garam masala
5-6 tablespoons oil
Salt & Red chili powder - to taste

Method

In a large corning casserole put potato and eggplant pieces. Add salt, turmeric and red chili powder. Mix and microwave for 20 minutes.

Meanwhile, heat oil in a nonstick pan and fry onions, cumin and ginger. When onions turn gold, add tomato and garam masala. Cook until smooth.

Pour this paste on Alu-Baigan and microwave again for 2 minutes.

Panzerotti (Italian Recipe)

Here is just a basic filling, but you can fill them with almost anything!


2 Balls Basic Pizza Dough Defrosted

1 1/4 Cups Diced Tomatoes, or Prepared Tomato Sauce

10 oz. Mozzarella Cheese, Thinly Sliced

Salt And Pepper

2 Tablespoons Fresh Basil, Finely Chopped

Oil For Frying


If using fresh tomatoes, place in a small pot and cook until they produce a thick sauce, about 10 minutes. Take the prepared dough after the first rising, and shape it into a long loaf, and divide it into 12 parts. Roll each of these parts on a lightly floured surface into a 3-4 inch diameter circle. Place a spoonful of tomato mixture on each circle, sprinkle with fresh basil, salt and pepper and cover with a slice of mozzarella. Lightly moisten the edges with water and pinch to seal. Fry in batches until golden brown. Drain well on paper towels and serve hot.
